Tofu & Maar Lemongrass Curry
Ingredients
- 1 block of firm tofu.
- 3 cloves of garlic, minced.
- 1 onion, chopped.
- 1 red pepper, chopped.
- 1 tablesppon Ancient Purity Maar Lemongrass.
- 1 teaspoon ground cumin.
- 1 teaspoon ground coriander.
- 2 tablespoons Ancient Purity Black Seed Oil.
- 1 can of coconut milk
- 1 tablespoon soy sauce.
- 1 tablespoon brown sugar.
- Ancient Purity Celtic Sea Salt & pepper to taste.
- Fresh cilantro, chopped.
Preparation
- Drain and press the tofu to remove excess water.
- Cut it into cubes and set aside.
- In a large pan, heat the Black Seed Oil over medium-high heat and fry the tofu for a few minutes per side, until golden brown.
- Remove from the pan and set aside.
- In the same pan, add the garlic, onion, and red pepper and fry for about 5 minutes, until the vegetables start to soften.
- Add the dried Maarr Lemongrass, cumin, and coriander and cook for another 2 minutes, stirring frequently.
- Pour in the can of coconut milk, soy sauce, and brown sugar and stir to combine.
- Reduce the heat to low and add the tofu back into the pan.
- Simmer for about 10-15 minutes, until the sauce has thickened.
- Season with salt and pepper to taste and sprinkle with fresh cilantro before serving.
