Olive Oil just Gives
When it comes to Olive Oil pressed from fresh olives, the Italians, Greeks and Spaniards have long had a corner on the market. In addition to enjoying the great taste of Olive Oil, Greeks understand that there’s more to the oil than meets the eye. It’s important to know that the flavor, smell and colour of Olive Oil can vary significantly based on whether it’s extra virgin (finest grade) or not. Extra virgin Olive Oil is the highest quality Olive Oil you can get. It is unrefined and contains more nutrients when compared to other processed varieties. In fact, in contrast to unrefined extra virgin Olive Oil, refined Olive Oils could be lacking in important fatty acids, rich oleic acid, and other nutrients.
A word of caution is warranted when it comes to Olive Oil… fake olive oil abounds. High-quality Olive Oil should smell fresh and fruity. It should have a slightly spicy taste, which can leave a harmless burning sensation in the back of your throat. Most organic farmers recognise the importance of caring for their soil and may already be practicing some of the biodynamic methods – thereby exceeding the organic standards. Certified Organic is still a very high-quality standard out there. Certified Biodynamic® is quite simply a step up to an even higher standard.

Most Olive Oil is not what says...
According to The New York Times, many Olive Oil manufacturers who include the words "Extra Virgin" and "Italian" on their labels, are not accurately describing the product. Some manufacturers have mixed high-quality oil with lower quality variants to save money. Sometimes the oil is not from Italy but the manufacturer has labelled it as such in hopes of fooling consumers who associate the European country with quality olive oil. In drastic cases, the oil isn't even olive oil at all but rather a vegetable oil that manufacturers have disguised with coloring and scent. Flashey labled supermarket olive oil is not exempt from the shady practices that plague the industry. Unbelivably in Italy, experts estimate around 50% of the olive oil on supermarket shelves is fake! Whilst over in the USA estimates range from 70 - 80%. The main cause of this issue is that making olive oil correctly is very difficult.
Olive Oil manufacturers have to grind and press the olives as soon after harvesting as they can. They also have to be gentle; too much friction will raise the temperature of the olive oil and ruin the flavor. Overheating will also result in olives that are high in oleic acid, which makes for a lower-quality oil overall. So there is the difficulty of making high quality olive oil, then events like bacterial outbreaks, which can kill olive trees rapidly, causing dips in olive oil production by as much as 20% in Europe. Manufacturers still have bills to pay, which may prompt them to cut corners. How to test Olive Oil purity
Put a small amount of oil in a shot glass (or small cup; the exact container isn't important here). Then put one hand over the container and one hand underneath it and swirl the oil.
Your hands will warm the oil and keep the aroma trapped. Position your mouth as if you were about to make the "ee" sound, raise the container to your lips and slurp it quickly. This allows the oil to coat your tastebuds evenly.
With your mouth open, inhale as if you've just cracked your toe on a sharp corner. This will help the oil coat your entire mouth. Take note of the taste. Quality, genuine olive oil will often have a taste that reminds you of freshly-cut grass. Fraudulent olive oil will remind you of mud or hay.
