Liquorice root contains the triterpenoid saponins glycyrrhizic acid (GA) (the sweet compound), polysaccharides, over three hundred flavonoids, flavanones (such as liquiritin and liquiritigenin), and chalcones (such as isoliquiritin and isoliquiritigenin). After being digested licorice potentiates the action of the steroid hormone, cortisol.
In this way licorice supports the hypothalamicpituitary-adrenal (HPA) axis, sparing cortisol by increasing the enzyme 5-beta-reductase, the enzyme that inactivates cortisol, and therefore prolonging its half-life.
By increasing the production of mineral corticoids, Liquorice helps convert cortisol to cortisone on demand, and assists in the restoration of dehydroepiandrosterone (DHEA) levels (an essential sex hormone precursor).

How Fermentation Helps Boost Antioxidant Activity
Polyphenols (also known as phenolics) are phytochemicals, natural plant chemicals with powerful antioxidant properties. There are over 8,000 identified polyphenols found in foods such as tea, chocolates, fruits, vegetables and herbs. Polyphenols can be broken down into four general categories (with additional subgroupings):
- Flavonoids / Stilbenes.
- Lignans / Phenolic acids.
As a general rule, foods contain complex mixtures of polyphenols, with higher levels often found in the outer layers of the plants. As one of the most extensively researched wholesome plants, Liquorice Root contains a plethora of polyphenols including flavonoids. In their natural state, these polyphenols contain not only antioxidant properties but other potential vitality-supporting properties as well.
The exciting thing is that when fermentation is used to enhance the licorice, the concentrations and bioavailability levels of many of the polyphenols are increased. Below is a chart with a sample of some key polyphenols found in our Biodynamic® Organic Fermented Liquorice and how their evaluated levels compare with conventional (non-organic/unfermented) and even biodynamic unfermented licorices.
For the biodynamic unfermented Liquorice evaluation, we used samples from the same lot of biodynamic licorice prior to it being fermented into our end product. This approach shows exactly how the fermentation process enhances the antioxidant content. This type of thorough testing had never been done before.
As a result of fermentation, the overall evaluation showed increases in concentrations of 20 Liquorice polyphenols and conversion of 12 additional compounds into their parental, usually more active forms.
Both of these actions increased the antioxidant activity potential of the fermented biodynamic vs. the unfermented biodynamic Liquorice. In addition, because of the Liquorice Root raw material chosen, the active Liquorice compound called glycyrrhizic acid is naturally low in the product. This is important because many licorice products contain excessive amounts of glycyrrhizic acid that may potentially lead to adverse side effects.
