Old Man Saltbush, Sea Parsley & Desert Lime Salmon

Ingredients

• 2 tablespoons Ancient Purity Celtic Sea Salt.

• 4 tablespoons Longan Honey (Available @Ancient Purity).

• 1 tablespoon Ancient Purity Desert Lime Syrup.

• 1 teaspoon Ancient Purity Old Man Saltbush.

• 1 teaspoon sea parsley.

• 3 teaspoons Vodka.

Preparation

• Blend all the above-mentioned ingredients together.

• Massage the mix into 800gm fresh salmon fillet.

• Place all the ingredients into a bag, squeezing out as much air as possible and refrigerate for 3 days.

• To serve, remove the fish and wipe down with paper towels.

• Slice thinly (flesh side up) and serve.

Lemon, Desert Lime, Lime & Grapefruit Bang

Ingredients

• ¾ cup filtered water.

• ⅔ to 3/4 cup Longan Honey (Available @Ancient Purity).

• 1 cup fresh grapefruit juice.

• 1 tablespoon grated lemon rind.

• ¼ cup fresh lemon juice.

• 1 teaspoon Ancient Purity Desert Lime Syrup.

• 2 ½ cups filtered ice water.

• 2 tablespoons fresh lime juice.

• 5 lemon slices (optional).

• 5 lime slices (optional).

• 5 mint sprigs (optional).

Preparation

• Combine 3/4 cup filtered water and Longan Honey in a saucepan over medium-high heat; cook until the honey dissolves, stirring frequently. Let it cool down.

• Stir in grapefruit juice, lemon rind, lemon juice, 2 1/2 cups filtered ice water, Ancient Purity Desert Lyme Syrup and lime juice.

• Garnish with lemon slices, lime slices, and mint sprigs, if desired.

Desert Lime Syrup Cake

Ingredients (8 Servings)

• 125 grams sour cream.

• 1 teaspoon finely grated lime rind.

• 40 ml Ancient Purity Desert Lime Syrup.

• 150 grams butter, at room temperature.

• 1 teaspoon vanilla extract.

• 170 grams coconut sugar.

• 2 eggs.

• 150 grams self-raising flour.

• 75 grams almond flour.

• 2 tablespoons filtered water.

• 1 lime, thinly sliced.

Preparation

• Preheat oven to 180°C. Grease and line the base and side of a 20cm (base measurement) spring-form pan. Combine sour cream, lime rind and Ancient Purity Desert Lime Syrup in a bowl.

• Use an electric beater to beat butter, vanilla and 100 grams coconut sugar in a bowl until pale and creamy.

• Add eggs, 1 at a time, beating well after each addition.

• Stir in sour cream mixture and combined almond flour, in alternating batches.

• Spoon into pan.

• Bake for 35-40 minutes or until a skewer inserted into centre comes out clean.

• Cool in pan for 15 minutes.

• Meanwhile, stir the water and remaining coconut sugar in a saucepan over low heat for 2-3 minutes or until sugar dissolves.

• Bring to the boil.

• Simmer for 10-12 minutes, brushing down side of pan occasionally with a wet pastry brush, or until golden.

• Remove from heat.

• Carefully add lime slices and a little more Ancient Purity Desert Lime Syrup. Swirl to combine. Cool for 2-3 minutes.

• Transfer cake to a wire rack over a lined tray.

• Spoon over hot syrup and lime slices.
